Pumpkin Bread3 cups sugar
1 cup applesauce
4 eggs
3 1/2 cups all-purpose flour
2 teaspoons baking soda
1 1/2 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
2/3 cup water
1 15-ounce can pumpkin
Preaheat over to 350F. Grease 2 bread pans and place parchment paper on botom of pans (this will help the loaf come out easier). In a bowl, beat sugar and applesauce on medium speed. Add eggs and beat well.
In separte bowl, combine flour, baking soda, salt, cinnamon, andnutmeg. Alternatively add flour and the water to the sugar mixture, beating between additions. Beat in pumpkin. Spoon butter into prepared pans.
Bake for 55-60 minutes, until toothpick comes out clean. Allow to cool for a few minutes before removing from pan.
