because we LOVE to volunteer

Everyone get excited about the SDA service project for this semester. We will be visiting the Courtyard at Jamestown Assisted Living Center and having a fun evening with the residents on Thursday, February 16 at 6:30. Please mark that night on your calendars. You will be hearing more details as the event approaches.

We have an opportunity to serve at the Eldred Senior Center on Valentine’s Day. They need volunteers to bring sugar cookies to decorate with the senior citizens. We will also be making cards with them. We have not yet confirmed that we will volunteer because we need to know how many people are willing to help on that Tuesday from 11:00-12:30ish. We know everyone is busy, but if you are free and can commit to helping with this Valentine’s Day project, please email Ashley Blaylock (ablaylock512@gmail.com) back by this Thursday night we we can to let the Eldred Center know if we can help with this project. Thanks everyone!

so i know i'm not alone in my love for pinterest. i found this and couldn't help but share this deliciousness with all ya'll. hope you enjoy it as much as i did.

behold: creamy white chicken and artichoke lasagna (aka heaven in a pan...)

Ingredients
  • 2 cups boneless skinless chicken breast, cooked and shredded
  • 1 (14 ounce) can artichoke hearts, chopped
  • 1/2 cup chopped sun-dried tomatoes
  • 1 (8 ounce) package Shredded Mozzarella Cheese
  • 1/2 cup Grated Parmesan Cheese
  • 2 (8 ounce) packages Cream Cheese, softened
  • 1 cup milk
  • 1/2 teaspoon garlic powder
  • 1/4 cup basil, chopped
  • 12 lasagna noodles, cooked
Directions
  1. Heat oven to 350 degrees F.
  2. Combine chicken, artichokes, tomatoes, 1 cup mozzarella and Parmesan. Beat cream cheese, milk, and garlic powder with mixer until well blended; stir in 2 tablespoons basil. Mix half with the chicken mixture.
  3. Spread half of the remaining cream cheese sauce onto bottom of 13x9-inch baking dish; cover with 3 noodles and 1/3 of the chicken mixture. Repeat layers of noodles and chicken mixture twice. Top with remaining cheese sauce and mozzarella; cover.
  4. Bake 25 min. or until heated through. Sprinkle with remaining basil. Let stand 5 min. before cutting to serve.
  5. EAT UP!

welcome back

welcome back all!

seniors...can you believe yesterday was our last, first day of class?? crazy how time flies.

juniors...can you believe your first semester is over?? you'll be seniors in no time!

just wanted to leave a little note to wish you all luck this semester. keep up the good work and don't get too overwhelmed. as you're working on your presentations for dr. fullmer's class or applying for internships just remember that it will all work out how it's supposed to.

little christmas treat to help you get through finals.

well ladies (and gents) it's here! the end of the semester. one more week of classes, finals, and then we're free for christmas.

just remember to study hard and you'll be fine!
if you're needing a little treat to help you get through these last couple weeks (and i always do...) here's a great recipe for one of my favorite holiday tre
ats toffee.

ENGLISH TOFFEE

(Makes approximately 2 pounds of candy)

Ingredients:
2 cups
unsalted butter
2 cups sugar
1/4 teaspoon salt
2 cups semi-sweet chocolate chips or chopped chocolate
1 cup pecans, finely chopped

Directions:
  1. Line a rimmed sheet pan with parchment paper.
  2. In a heavy bottom saucepan, melt the butter over medium low heat. Stir in the sugar. Increase the heat and bring the mixture to a boil. Insert a candy thermometer and cook the mixture until it reaches 285 degrees F, stirring occasionally.
  3. Melt the chocolate in a double boiler or in the microwave in 30 second intervals, stirring frequently.
  4. Once the butter and sugar mixture reaches temperature, immediately pour into the lined sheet pan. Let set for a few minutes, then spread the melted chocolate on top. Immediately sprinkle with the chopped pecans.
  5. Let set for several hours until firm. Break the candy into small pieces. Store in an airtight container at room temperature, candy should keep for several days.

Artisan Bread

This bread is delicious and really easy to make! And, you'll look like you are a professional when people see the end product.

Artisan Bread
Ingredients:
3 cu lukewarm water
1 1/2 Tbsp yeast
1 1/2 Tbsp salt
6 1/2 c flour
cornmeal

Combine water and 3 1/4 cup flour. Add salt, yeast, and the rest of flour. Don't knead. Rise, covered, for at least 2 hours. Place in fridge for at least 3 hours, or up to 2 weeks.

Gently shape dough into 4 round loaves on a well floured surface. This should only take a few seconds, or dough will deflate. Place in cornmeal to coat the bottom to give it a delicious pizza peel. Place on pan lined with parchment paper and allow to sit rise for 20 minutes.

Preheat oven to 450 F. Dust top of bread with flour, then slash lines into the top. Place a pan with 1-2 cups water on lower shelf of oven. Place pan in the oven and bake for 30 minutes.

For best results when cutting, allow to cool first. Otherwise, it will still be delicious, but will deflate some when you cut it.

food drive time.

Remember that the SDA Food Drive Competition starts this Monday the 14th and ends Tuesday the 15th. There will be boxes with each year's name on them directly outside of the Dietetics Lab (C-271 ESC) for you to put the food in. Just a reminder, here are the different food's point value

5 points - meat
4 points - any dry goods (pasta, oats, cereal, rice, etc.)
3 points - canned fruits and veggies
2 points - peanut butter
1 point - anything else

please do not bring anything perishable.

Pumpkin Bread

Halloween was 3 days ago, and now Thanksgiving is just around the corner. Sounds like the perfect time to make some delicious pumpkin bread! Pumpkin Bread
3 cups sugar
1 cup applesauce
4 eggs
3 1/2 cups all-purpose flour
2 teaspoons baking soda
1 1/2 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
2/3 cup water
1 15-ounce can pumpkin

Preaheat over to 350F. Grease 2 bread pans and place parchment paper on botom of pans (this will help the loaf come out easier). In a bowl, beat sugar and applesauce on medium speed. Add eggs and beat well.

In separte bowl, combine flour, baking soda, salt, cinnamon, andnutmeg. Alternatively add flour and the water to the sugar mixture, beating between additions. Beat in pumpkin. Spoon butter into prepared pans.

Bake for 55-60 minutes, until toothpick comes out clean. Allow to cool for a few minutes before removing from pan.

Baby Apple Pies



After much debating, and trying to figure out which delicious recipe to go for, I figured people would appreciate a nice, easy, impressive fall recipe. So, I give you,

BABY APPLE PIES!!!


Ingredients:
- 2 packages of pre-made pie crust dough [found in the refrigerated section]
- 4 large apples, chopped into small pieces [I use granny smith. I like the tart with all the sweet]
- 2/3 cup brown sugar
- 1 tsp nutmeg
- 2 tsp cinnamon
- 4 Tbsp flour
- salt
- 1 muffin pan

Directions:
Preheat oven to 345 F. In a bowl, combine apple pieces, brown sugar, nutmeg, cinnamon, flour, and some salt.
Cut pie dough into circles, a little larger than the top of the muffin pan you are using. Place dough into muffin pan.
Scoop apples into each pie. Now, for the creative part! Using the scraps of dough, top the pie. You can do a lattice work, or cover with crust, making sure to leave venting holes. Make sure to pinch top dough with the bottom dough or it will fall off after being backed!
Bake for about 35 minutes, depending on how done you like your crust. Sprinkle with powdered sugar or serve with vanilla ice cream. Enjoy!!!
